Sweet Potato Cheesecake

- 1 shortbread pie crust
- 1 package of cream cheese (225 grams)
- 1 egg
- 3 tbsp of sugar
- 1 tsp vanilla paste
- 1 cup of boiled sweet potatoes mashed
- 1/2 cup brown sugar
- Sprinkle of salt
- 2/3 cup of single cream
- 1/2 tsp of ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
Preheat your oven to 350. Line the bottom of your pan with parchment paper so the pie keeps its form. You can remove the paper after baking is complete.
Mix cream cheese, egg, sugar and vanilla together until it is a smooth cream.
Then combine the sweet potato with the egg, sugar, salt, spices and cream. Once this is evenly mixed, this will serve as your sweet potato filling.
You will spread the sweet potato filling over the cream cheese filling evenly with a spoon.
Bake the pie for 50-55 minutes and you will be ready to enjoy this holiday treat.
